Healthy Chicken Salad Recipe
6oz Shredded Chicken
(cooked your own chicken breast then shredded it.)
1/3 Cup Dried Cranberries
1/4 Cup Sliced or Chopped Almonds
1/4 to 1/2 Small Yellow Onion Diced
1 Small Apple Chopped
1/2 Cup Plain or Vanilla Greek Yogurt (Don’t worry you can’t taste the vanillia!)
1/2 Teaspoon Curry Powder
2 Teaspoons Soy Sauce
(We use “less sodium” soy sauce)
Squeeze of Lemon Juice
Chop almonds (if needed), onion and apple. Add chopped items with chicken and cranberries in one bowl. In separate bowl mix yogurt, curry powder, soy sauce and lemon juice. Then add yogurt mix to chicken mix. Stir thoroughly. Add lemon juice to taste. Chill before serving.
Serve on bread thins or eat by itself!
